Chewy Flourless Chocolate Cookies

Hey! Happy fall! Sorry it’s been a super long time since my  last post… 😦 been pretty busy lately.

So, I made these cookies for the first time a couple weeks ago, (I didn’t have time to take pictures for a post since we had company coming over) and I fell in love! ❤ I felt I just had to share this delicious recipe with you. Such a pity, I had to make them again for the blog… 😛

As it says in the title, these are flourless cookies, making them perfect for people going gluten-free! But they definitely aren’t for people going sugar-free, as the main thing holding them together is powdered sugar. 😀

On to the chocolaty lusciousness!

First, line two baking sheets with parchment paper and spray with nonstick spray. (I usually don’t do both, but with this recipe I highly recommend doing so, because the cookies can stick quite a bit. I learned that the first time I made them. Me: “Oh I don’t need to do both parchment and spray. It’ll be fiiiine.” Nope.)

Next, in a large bowl, whisk together 3 cups powdered sugar, 2/3 cup cocoa powder & 1/4 teaspoon salt

Stir in 3 egg whites & 1 tablespoon vanilla extract

Gently stir in 1 1/2 cups of semi-sweet chocolate chips. I think it’s best to use a spoon to do this, so you don’t lose any chocolate chips to the whisk. 😀

Spoon the batter onto the parchment lined sheets, 12 mounds per baking sheet. (they may look pretty small doing 12 per sheet, but they expand quite a lot)

Preheat the oven to 350 degrees. Let the cookies rest 30 minutes before baking.

Bake for 10-12 minutes until tops are glossy and lightly cracked. If you’re doing them on two oven racks like me, I would suggest switching them halfway through the baking time.

Let the cookies cool for a few minutes before gently putting them on cooling racks to finish cooling

Ingredients:

  • 3 cups powdered sugar
  • 2/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 3 egg whites
  • 1 tablespoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips

Instructions:

Line two baking sheets with parchment paper and spray with nonstick spray.

In a large bowl, whisk together powdered sugar, cocoa powder and salt. Stir in egg whites and vanilla extract until batter is completely moistened. Gently stir in chocolate chips.

Spoon the batter onto the parchment lined sheets, 12 mounds per baking sheet. Preheat the oven to 350°. Let the cookies rest for 30 minutes before baking. Bake for 10 to 12 minutes, {switching baking sheets halfway through if you’re using 2 oven racks} Until tops are glossy and slightly cracked.

Let the cookies cool for a few minutes before placing on cooling racks to finish cooling.
